Croutons with smoked salmon, sour cream, aromatic herbs and Tropea red onion marinated in Carandini Organic Apple Cider Vinegar

Ingredients

4 slices of mountain bread
1/2 cup Carandini Organic Apple Cider Vinegar
1 large Tropea onion (or red onion), thinly sliced
2 cups sliced smoked salmon
1 small cucumber, thinly sliced
Fresh aromatic herbs (fennel, marjoram, mint, or coriander), to taste
1/2 cup sour cream (approx. 1lbs)
1 tablespoon honey
Extra virgin olive oil, salt, and pepper to taste

Directions

Remove the outer layer of the onion and finely slice it into rings.

In a pan, combine Carandini Organic Apple Cider Vinegar, a spoonful of honey, and a teaspoon of salt. Bring it to a boil.

Place the sliced onions in a heat-resistant bowl and carefully pour the boiling Organic Apple Cider Vinegar over them. Allow the onions to cool in their flavorful marinade.

While the onions are marinating, toast the bread until it reaches a golden-brown perfection.

Once the bread is toasted, generously spread sour cream on it. Then, layer on the smoked salmon, a few slices of onion that have been dried by excess marinade, and some thin cucumber slices.

Finally, season the creation with a drizzle of extra virgin olive oil, a sprinkle of salt, and a dash of pepper.
