Bianca Highball Non-alcoholic Cocktail with Sweet Wine Vinegar

Ingredients

1 Dash Black Pepper Tincture
1 Dash Celery Bitters
.75 oz Fresh lemon juice
0.5 oz Fresh cucumber juice
.5 oz Mint Syrup
.5 oz Bianca Sweet White Vinegar
.5 oz Verjus Blanc (fusion brand)
Top with Sparkling Water

Directions

Add all ingredients to a small shaker tin (except the sparkling water). Add cubed ice to the tin and give a hard shake for 5 seconds. Strain off liquid using a hawthorne
strainer over fresh cubed ice in a highball glass. Top with sparkling water.
Give a light stir.
Express lemon oil over the top of the drink, then discard the peel.
